Turkey Meatloaf

The weather is getting cooler and sometimes there is nothing better than a nice hot meatloaf dinner. But in light of your husband's latest cholesterol test, you need to watch the red meat intake. Bummer, right? Wrong. When cooked correctly, turkey can be a moist and delicious replacement for traditional meatloaf. Serve it with some roasted potatoes and sauteed spinach and you’ll have yourself a meal no one can turn down.

Ingredients

(serves 2)
  • 1½ pounds ground turkey
  • 1 yellow squash, grated
  • 1 cup red bell pepper, chopped
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 large egg
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon whole grain mustard
  • ⅛ cup BBQ sauce

Directions

  1. Preheat oven to 375℉

  2. Combine all ingredients except the BBQ sauce in a large bowl and mix until well combined.

  3. Transfer turkey mixture into a 9″ x 5″ loaf pan. Spread BBQ sauce evenly on top of the mixture and cover with a lid or aluminum foil

  4. Bake for 45 minutes covered, and then 15 minutes uncovered.

  5. Remove from oven and let rest for 10 minutes.

  6. Slice and serve hot with your favorite sides!
